Vinification and aging

Winemaking at Yarra Yering is carried out with the utmost care, respecting traditions and paying meticulous attention to detail. The grapes are hand-harvested at optimal ripeness and then rigorously sorted. Fermentation takes place in stainless steel tanks using indigenous yeasts to preserve the authentic expression of the terroir. Aging occurs in French oak barrels of varying sizes and toasting, for a period that varies depending on the vintage. The wines are then bottled unfiltered to retain their full richness and complexity.
