Vinification and aging

Yarra Yering's winemaking methods are focused on precision and respect for the fruit. The grapes are hand-harvested at optimal ripeness and then carefully sorted before vinification. Fermentation takes place in stainless steel tanks or oak casks, with extended maceration to extract aromas and tannins. Aging then occurs in French oak barrels for a period that varies depending on the vintage and the wine, allowing the structure and complexity of the wine to develop.
