Vinification and aging

The winemaking process for Johnnos Shiraz is carried out with the utmost care, respecting traditional methods. The grapes are hand-harvested at optimal ripeness, then destemmed and crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks to preserve the aromas and freshness of the fruit.
