Vinification and aging

The vinification of Wynns Coonawarra John Riddoch Cabernet Sauvignon is carried out with the utmost care, respecting both tradition and modern techniques. The grapes are harvested at optimal ripeness, then sorted and destemmed. Alcoholic fermentation takes place in stainless steel tanks, with extended maceration to extract aromas and tannins. Aging occurs in French oak barrels, some of which are new, for an extended period, allowing the wine to gain complexity and finesse. After bottling, the wine is further aged in the cellar for several months before release.
