Prieuré Saint Jean de Bébian is a treasure of the Languedoc. Its aging potential is exceptional, and this vintage reveals the full potential of this magnificent terroir.

This characterful wine is ideal with meat in sauce, spicy dishes, or small game birds. Serve at around 15°C.

Owner and history

The vineyards stretch across 35 hectares between the Cévennes mountains and the Mediterranean Sea. The 42 plots have an average vine age of 31 years (including 3 hectares of Grenache planted in 1925). The vineyard is currently undergoing organic certification.

Vinification and aging

The grapes are harvested by hand and then sorted. The vines are partially destemmed.
The winemaking process is carried out plot by plot in stainless steel and concrete tanks.
The wines are aged for 18 months, plot by plot, in concrete tanks for the Grenache and in large oak casks for the Syrah and Mourvèdre.
