    Vinification and aging

    Winemaking at Domaine Ott is a meticulous process, blending tradition and innovation. The grapes are harvested by hand, then carefully sorted to retain only the finest. After a brief maceration, the pressing is carried out delicately to extract the best aromas. Fermentation takes place in stainless steel tanks, allowing for perfect temperature control.
