    Vinification and aging

    The winemaking process for La Bauge Au Dessus begins with a manual harvest of the grapes, ensuring rigorous selection. After delicate destemming, the berries are placed in vats for temperature-controlled fermentation, allowing for the extraction of aromas while preserving the finesse of the Pinot Noir. Aging takes place in oak barrels, some of which are new, for a period that promotes the integration of oak aromas and the wine's complexity.
