    Vinification and aging

The vinification of the 2020 Kiwa Pinot Noir is carried out with great precision, aiming to preserve the freshness and elegance of the fruit. The grapes are hand-harvested and rigorously sorted before being destemmed. Fermentation takes place in stainless steel tanks, using indigenous yeasts to promote aromatic complexity. Aging occurs in French oak barrels, a proportion of which are new, for an undisclosed period. This stage allows the tannins to soften and imparts subtle notes of vanilla and spice. The wine is then bottled unfiltered to preserve its integrity and unique character.
