    We enjoy this lovely Sancerre with sea bass in a beurre blanc sauce with fennel, honey-roasted turkey, or even a baked Mont d'Or cheese with a few sprigs of rosemary. Serve at around 12°C. The wine is already very enjoyable now and will develop great complexity after a few years of aging.

    Owner and history

    This cuvée comes from a historic terroir in the Côte de Chavignol. The Sauvignon Blanc grapes are cultivated organically and biodynamically, without the use of chemicals. The appellation's typical terroir, rich in Kimmeridgian marl from Chavignol, is perfectly expressed in this beautiful wine.

    Vinification and aging

    - Fermentation in demi-muids (600 litres)
    - Bottling according to the lunar calendar after 14 months of aging
    - Bottle aging for a few additional months
