    Owner and history

    The Château Canon vineyard covers 22 hectares in a single block, dedicated to the Grand Vin. Its terroir is highly conducive to the expression of the grape varieties. The soil is a combination of limestone with asterias fossils covered by a thin layer of clay.

    Vinification and aging

    - Hand-harvested grapes from September 14th to 25th and from September 30th to October 2nd, 2015, and hand-sorted.
    - Vinification by plot, in truncated conical stainless steel tanks
    - Malolactic fermentation takes place in 1/3 new barrels and 2/3 tanks
    - Aged in French oak barrels, 70% new and 30% one-year-old, for 18 months
