    This Chablis Premier Cru pairs wonderfully with oysters, sea bream ceviche, salmon tartare, or even a creamy poultry dish with morels. Best enjoyed between 10 and 12°C.

    Owner and history

    The Premier Cru Vaillons is one of the most prized vineyards in Chablis. Its southwest exposure and Kimmeridgian limestone soil impart a pronounced minerality to the wine, a beautiful balance between freshness and roundness, and excellent aging potential. The estate's vines are cultivated according to biodynamic viticulture principles, promoting a pure expression of the terroir and great aromatic finesse.

    Vinification and aging

    The winemaking process respects Burgundian traditions with a minimalist approach. After gentle pressing, fermentation takes place in stainless steel tanks to preserve the freshness and purity of the fruit. Aging on fine lees for 12 to 15 months enhances the wine's complexity while preserving its precision and minerality.
