Vinification and aging

Winemaking at Domaine Robert Chevillon is crafted with the utmost care, respecting Burgundian traditions. The grapes are harvested by hand, with rigorous sorting. Fermentation takes place in wooden vats, with maceration lasting a varying length depending on the vintage. The wine is then aged in oak barrels, a proportion of which is renewed each year.
