Ancienne possession des moines de l'abbaye de Pontigny, Monopole du Domaine Long-Depaquit, la "Moutonne" est une parcelle abritée dans un amphithéâtre naturel au coeur des Grands Crus, le secteur historique et millénaire du vignoble chablisien. Située à 95 % sur les "Vaudésirs" et 5 % sur les "Preuses", exposée sud-sud/est, sa forme et son emplacement idéal en font un véritable récepteur solaire naturel. Sa pente prononcée en partie centrale (près de 40%) protège la parcelle des vents du nord. Traversée par un mur, la partie basse donne un vin riche et structuré alors que la partie haute confère un côté floral et davantage de tension.

La Moutonne est ce qu'on appelle un "monopole" du Domaine Long-Depaquit (propriété de la Maison Albert Bichot). Bien qu'il ne soit pas officiellement l'un des sept climats originels de l'INAO, il est historiquement reconnu comme le "huitième" Grand Cru de Chablis, à cheval sur les climats "Les Preuses" et "Vaudésir".
