Vinification and aging

Winemaking at Domaine Long-Depaquit is crafted with meticulous precision, aiming to preserve the purity of the fruit and the expression of the terroir. The grapes are harvested at optimal ripeness and then vinified in temperature-controlled stainless steel tanks. Aging takes place partly in French oak barrels, with a limited percentage of new oak to avoid masking the wine's character.
