Vinification and aging

Winemaking at Domaine Hubert Lignier is carried out with the utmost care, respecting Burgundian traditions. The grapes are harvested by hand to select only the best. Fermentation takes place in wooden vats, with maceration lasting a longer or shorter period depending on the vintage. The wine is then aged in French oak barrels for a variable period to refine the tannins and develop its aromatic complexity. Domaine Hubert Lignier favours a low-intervention approach, in order to preserve the authentic expression of the terroir.
