Laurent Lignier is a passionate winemaker, driven by the desire to produce exceptional wines that reflect the richness and complexity of Burgundy's terroirs.

Vinification and aging

Winemaking at Domaine Hubert Lignier is a meticulous process, respectful of Burgundian traditions. The harvest is done by hand, in order to select only the best grapes. Fermentation takes place in wooden vats, with a long maceration to extract aromas and tannins. Aging occurs in French oak barrels, a proportion of which are new, for a period of 18 to 24 months. This process allows the wine to refine itself and develop its aromatic complexity. Domaine Hubert Lignier favours a low-intervention approach, in order to allow the terroir to fully express itself.
