Vinification and aging

Winemaking at Domaine Georges Noëllat is crafted with a minimal intervention philosophy. The carefully sorted grapes are destemmed and fermented in wooden vats, promoting gentle tannin extraction. Fermentation takes place at a controlled temperature to preserve fruity and floral aromas. After fermentation, the wine is aged in oak barrels, some of which are new, for approximately 16 to 18 months. This aging process allows the oak to subtly integrate while letting the purity of the fruit and the typicity of the terroir shine through.
