THE Domaine Drouhin-Vaudon - Chablis Grand Cru Vaudésir 2018 is a vintage that embodies the perfect marriage between the solar richness of a warm vintage and the historical mineral tension of Chablis.

To fully understand this wine, you must first know that the Domaine Drouhin-Vaudon is the Chablis property of the famous Maison Joseph Drouhin. THE domaine is a pioneer of biodynamic agriculture in the region.

This Vaudésir 2018 is the ideal companion to noble dishes: grilled lobster with semi-salted butter, pan-fried scallops or Bresse poultry with cream.

The site: a renowned vineyard with a topography unlike any other in Burgundy. The curved line and steep slope evoke an ancient theater. It benefits from a dual exposure: due south in the north and southwest in the south. One of the seven Grand Cru vineyards of Chablis, and among the largest. History & tradition: the name of this cru comes from the "Chemin des Vaudésirs" (Path of the "Vaudésirs"), which divides the terroir in two. In 1960, when the Chablis vineyards were largely abandoned, Robert Drouhin believed in the potential of this soil, ravaged a century earlier by phylloxera. He was among the first Burgundian owners to develop it, producing wines typical of their terroir of origin. The soil: Kimmeridgian limestone containing billions of tiny marine fossils in a whitish cement that must have been the ocean floor... hundreds of millions of years ago. This marine origin gives Chablis wines a unique flavor.

THE Domaine Drouhin-Vaudon is owned by the Drouhin family, a family of Burgundian winemakers passionate about their craft. Drawing on their heritage and expertise, they have created a domaine exceptional in Chablis, combining tradition and modernity.

Vinification and aging

across its entirety domaine of 100 hectares, the House Joseph Drouhin We have embraced organic viticulture practices since the late 1980s and biodynamic practices since the 1990s. Our credo is to provide "natural solutions to natural problems." All our practices demonstrate the utmost respect for the soil, the vine, and the environment. Our intentionally low yields allow our grapes to reveal the true expression of each terroir.

Harvesting: by hand into openwork crates. Careful sorting if necessary.

Winemaking: The whole bunches are slowly pressed in a pneumatic press. The juice from the last pressing is separated from the free-run juice. After light settling, the juice is transferred to barrels that have held one (or older) wine.

Aging: alcoholic fermentation and aging take place in oak barrels (500 liters, no new barrels) for 12 to 15 months.

Throughout the process, decisions are primarily based on tastings. This data is naturally supplemented by technical analyses. As with all the wines of the House, absolute priority is given to expressing the terroir and respecting the vintage character.

The team's opinion

2018 was a warm and early year in Burgundy. Unlike cooler, more austere vintages, 2018 offers riper fruit and a more fleshy texture. The challenge was to preserve its freshness. At Drouhin-Vaudon, their expertise allowed them to maintain a beautiful energy despite the vintage's natural concentration.
