Vinification and aging

Winemaking at Domaine Comtesse de Cherisey is crafted with the utmost care, respecting Burgundian tradition. The grapes are hand-harvested and rigorously sorted. Alcoholic fermentation takes place in French oak barrels, with a proportion of new barrels adapted to the vintage.
