Vinification and aging

Fermentation takes place in wooden vats, promoting a gentle extraction of tannins. Aging in oak barrels, approximately 30% of which are new, refines the wine while preserving its purity. This process, combined with light lees stirring, enriches the wine with complexity and structure. Bonnes-Mares Grand Cru The 2019 vintage is then bottled without filtration, in order to preserve all its aromatic richness.
