Vinification and aging

The Lunita Pinot Noir is made using a minimalist approach, prioritizing the natural expression of the fruit and terroir. The grapes are hand-harvested, rigorously sorted, and then vinified in stainless steel tanks. Fermentation takes place at a controlled temperature to preserve the delicate aromas of the Pinot Noir. Aging occurs in French oak barrels, with a limited percentage of new oak to avoid masking the wine's character. Particular care is taken at each stage of the process to create an elegant, balanced, and expressive wine.
