Kevin Judd, a pioneer of New Zealand winemaking, is the owner and driving force behind Greywacke. Drawing on his experience as head winemaker at Cloudy Bay, he founded Greywacke with the vision of producing wines that reflect the unique terroir of Marlborough. His passion for winemaking and his respect for the environment are evident in every bottle. Together with his dedicated team, Kevin is committed to working in harmony with nature, ensuring the quality and authenticity of Greywacke wines.

Vinification and aging

The vinification of Greywacke's Chardonnays is carried out with great care. The grapes are hand-harvested and then gently pressed to preserve the integrity of the berries. The juice is fermented in oak barrels, where it ages on its lees, imparting complexity and roundness to the wine. Malolactic fermentation is often encouraged, adding a creamy dimension to the aromatic profile. This artisanal method captures the essence of the terroir while offering a balanced, rich, and elegant wine.
