    Vinification and aging

    Winemaking at Domaine Patrick Baudouin is a meticulous process that respects the fruit. After a carefully selected, hand-harvested grape, the grapes are gently pressed to preserve their integrity. Fermentation takes place in stainless steel tanks, allowing the freshness and aromatic expression of the Chenin Blanc to be retained. Aging, which can be done on the lees, gives the wine a beautiful roundness and added complexity.
