Vinification and aging

Winemaking at Domaine Jean-Marie Bouzereau's wine is crafted with the utmost care, respecting Burgundian traditions. The grapes are harvested by hand to select only the finest. After gentle pressing, the must is fermented in French oak barrels, with a proportion of new oak barrels tailored to the vintage and terroir. Aging then continues for several months, allowing the wine to gain complexity and finesse. domaine favours a low-intervention approach, in order to preserve the natural expression of the terroir and the grape variety.
