    Cloudy Bay is currently owned by the Moët Hennessy group, which acquired the domaine in 2003.     Vinification and aging

    The winemaking process for Cloudy Bay Sauvignon Blanc is meticulous, beginning with the hand-harvesting of the grapes to ensure rigorous selection. After gentle pressing, the juice is fermented at low temperatures to preserve fresh, fruity aromas. Fermentation takes place partly in stainless steel tanks and partly in oak barrels, adding complexity to the wine. Following fermentation, the wine is aged on its fine lees, which imparts a creamy texture and enriches its character. This care at every stage of winemaking results in a remarkably elegant Sauvignon Blanc.
