The Castello di Ama vineyard stretches across complex soils composed of clay, limestone, and schist, giving the wines exceptional minerality and structure. The vineyards' altitude, ranging from 450 to 520 meters, contributes to the wines' freshness and elegance. climat The climate is continental, with hot, dry summers and cold winters, promoting slow and even ripening of the grapes. Careful attention to plot selection and vine management is paramount to guaranteeing quality and the expression of the terroir in every bottle.

Owner and history

The Sebasti family, owners of Castello di Ama, have breathed new life into the domaine since the 1970s. Their passion for wine and their commitment to quality have allowed Castello di Ama to rise among the greatest names in Chianti Classico. Lorenza Sebasti, at the head of the domaine, perpetuates this heritage with a modern vision and artistic sensibility, making each wine a work of art in its own right.

Vinification and aging

Winemaking at Castello di Ama is a meticulous process, blending tradition and modernity. The grapes are hand-harvested, carefully sorted, and then destemmed before being fermented in temperature-controlled stainless steel tanks. Maceration lasts approximately two to three weeks, allowing the aromas and tannins to be extracted from the grape skins. Aging then takes place in French oak barrels for a period that varies depending on the vintage, in order to refine the wine's structure and complexity. The aim is to preserve the authenticity of the fruit and the expression of the terroir, while adding a touch of elegance and finesse.
