Vinification and aging

The winemaking process for Pinot Noir Belles Soeurs is carried out with meticulous attention to detail. The grapes are hand-harvested and rigorously sorted to retain only the healthiest and ripest berries. Fermentation takes place in stainless steel tanks using indigenous yeasts, preserving the authenticity of the terroir. The wine is then aged in French oak barrels, a proportion of which are new, for a period that varies depending on the vintage. This stage allows the tannins to soften and the aromas to develop more complex, while preserving the wine's freshness and elegance.
