Vinification and aging

The winemaking process is carried out with great care to preserve the integrity of the aromas and the wine's structure. The grapes are destemmed and crushed before being placed in vats for fermentation. Maceration is performed gently to harmoniously extract the tannins and aromas. Aging takes place in oak barrels, allowing the wine to refine and gain complexity. Maison Les Alexandrins favors moderate aging to avoid masking the character of the terroir and to preserve the wine's freshness.
