The vineyard site was chosen after a thorough study of the region, perfectly aligned with Stephan's winemaking experience. He immediately favored the western sector of Paso Robles for its hillsides and the quality of its terroir. The 127-acre property he selected comprises several hills at varying altitudes, complex soils, and benefits from excellent drainage. He considers these terroir characteristics essential for obtaining the high-quality grapes necessary to craft the wines he envisioned for L'Aventure.

    Owner and history

After training at the School of Oenology in Mâcon, Burgundy, Stephan founded the Domaine from Courteillac to Bordeaux in 1982. Over the next fifteen years, he established himself as a winemaker-craftsman with meticulous know-how, while forging a reputation for an anti-conformist spirit. However, he aspired to innovation that went beyond the strict framework of AOC regulations; he wanted to broaden his expertise while enjoying greater freedom in viticulture and winemaking. In 1998, the Asseo family left Bordeaux to explore the world's great wine regions for over a year—from South Africa to Lebanon, from Argentina to Napa. It was then that they fell in love with the unique terroir of western Paso Robles, thus giving birth to the domaine L'Aventure.

    Vinification and aging

High-density planting, precision irrigation and rigorous foliage management create optimal conditions for obtaining complex and concentrated fruits, favoring phenolic maturity.
The choice of rootstocks was made to take full advantage of the terroir; only those promoting slow ripening and a deep root system were selected. With this same objective in mind, planting was carried out at a high density, exceeding 2,000 vines per acre. The irrigation system was specifically designed to allow each row to be watered independently, thus ensuring an optimal balance between water supply, sun exposure, and soil characteristics.

The location chosen for each grape variety, the irrigation method, the terroir, and the high planting density all contribute to enhancing the complexity and concentration of the fruit. Given our geographical location, we firmly believe that blending is essential to achieving a perfect balance between tannins, alcohol, and acidity, ensuring that no single grape variety overpowers the others. The result is a remarkable wine with a truly unique character.
