The grape varieties are judiciously planted according to the nature of the soils and their exposure: Syrah and white grape varieties on sandy-limestone soils to preserve their freshness, while Grenache and Mourvèdre find their balance on clay-limestone soils rich in rolled pebbles.

Sustainable viticulture is at the heart of the estate's practices. The vines are meticulously tended to allow for optimal expression of the terroir: regular tilling, bud thinning, leaf removal, and green harvesting are adapted plot by plot. The harvest is carried out by hand, with a rigorous double sorting process to select only the best grapes. This respect for the terroir and this meticulous approach guarantee wines of exceptional quality, rich in aromas and flavors.

The carefully sorted grapes undergo partial destemming, followed by cold pre-fermentation maceration to preserve aromas. Fermentation takes place under precise temperature control, while gentle punch-downs allow for delicate tannin extraction. Long macerations, lasting three to four weeks, ensure optimal aroma concentration.

Livestock farmingThis wine is made with a thoughtful use of wood. The Grenache grapes are aged primarily in large oak casks for slow micro-oxygenation, while the Syrah and Mourvèdre grapes benefit from barrels for added finesse. A small proportion of new oak is used, just enough to bring complexity without masking the wine's identity. This aging process, lasting 12 to 14 months, is followed by precise blending, guaranteeing perfect harmony between power and elegance.
